One of the local supermarkets had split chicken breasts on sale for a little over one half the normal price this past Wednesday.
I had to get some.
So I bought some.
A little under 50 pounds worth of split chicken breasts.
My freezer now has:
5 packages of pre-cooked chicken breasts for chicken parmigiana
3 packages of boneless chicken breasts marinated in Italian dressing
2 packages of boneless chicken breasts marinated in Lemon Pepper
3 packages of chicken pieces in Sesame Ginger marinade for stir fry
1 package of plain chicken pieces for stir fry
2 packages of chopped cooked chicken breasts
3 packages of cooked BBQ bone-in chicken breasts
I also have 14 quarts of chicken stock waiting to cool and be de-fatted and canned. Along with that I have another 5 packages of chicken bones and stuff to make more chicken stock for canning.
My mom brought me her pressure canner so I can actually can the chicken stock instead of freeze it .... as soon as I figure out how to use a pressure canner!
We are going to have some good food coming up!
I really wanted to go get some more, but that didn't happen.
Because, really, at just under $2.25 per meal for the meat, this is really good for our budget!
