Monday Menu: 10/12 to 10/18



That time again to link up with Mary Ellen for the menu for the week. 

Well, actually, it was that time a couple weeks ago when I fell off the wagon after one short week. I have to say, that trip to NC to see Catherine tossed whatever schedule I had started this school year right out the window. Couple that with a change in our school break week and yeah; the menus were haphazard at best. And it showed. Lots of scrambling for dinner. No dinners were great. And too many trips to the store for food.

So, back on the wagon we go. This week will be nutty in that Frank is SUPER busy. Which is a great thing considering the past too many years of not being busy. I did ask him for some ideas for dinners he would like this week (thought I would go with what he really likes since he is working so hard for us).  And our menu this week:

DINNERS
Sunday:   Grilled pork chops, rice, corn, apple sauce
Monday:  Meatloaf, mashed potatoes, mixed veggies, peaches
Tuesday:  BBQ shredded chicken, french fries, veggies, salad
Wednesday:  'Couves com frijao' (Portuguese Kale soup with beans and liguica)
                 ...we might keep Wed as Portuguese food day and let my mother-in-law cook on those days as we are out most of the day - win, win: she gets to cook and we get to eat! I would love to put the recipes out here, but there really aren't any that are being used. I will try to figure out a recipe for some of these foods, but I guarantee nothing!
Thursday:  Hamburg Stroganoff (Frank's only request) with pasta and salad
Friday:     Shrimp and rice, apple sauce, sauteed edamame
Saturday:  Hot dogs and beans 


LUNCHES
Depending on the day: will be sandwiches: pb&j, tuna, egg salad. Will make stock after Tues dinner and have that over rice (the littles' favorite food lately)

BREAKFASTS
In no particular order: depending on when I bake: pancakes, coffee cake, cherry danish, muffins. All will be served with scrambled eggs and grape applesauce and juice. Need to stop the cereal madness!

Well, this seems to already be working as the hamburg is out to defrost for dinner tonight and the shopping list is in process for a trip to the store later today.
