Breakfast - Toste Take-out

I am trying to conserve our money.

Actually, I am trying to grow money in the backyard, but that is not working, so I have to conserve what my husband brings home.

One of the places where I am really working hard is food. Yep, everyone still wants to eat even when it gets really expensive - and it is getting REALLY expensive to feed this crew.

When we were getting ready for Catherine's Confirmation, we were perusing the food circulars. Frank discovered one of the stores was having a "Buy One, Get Two Free" deal on English Muffins. So, when he went to buy soda (a major treat in this house and only for special occasions), I asked him to get 9 packages of the muffins.

This morning I turned 8 of those packages into breakfast for Frank.



I cooked the eggs in muffin tins to make it go by quicker. When we make them individually in the morning (or afternoon, or evening) we cook them in the microwave.

Breakfast sandwiches are a really great on-the-go breakfast, especially when they are homemade.

 Each sandwich is individually wrapped in a paper towel and put in freezer bags. All Frank needs to do for breakfast is remove one or two sandwiches from the freezer, place in microwave (in the paper), and set for one minute. Voila! Take-out Breakfast!




And at a cost of about 70 cents each, much less expensive than buying them somewhere else.

I managed to make 8 Egg and Cheese Sandwiches and 40 Egg, Ham and Cheese Sandwiches (utilizing leftover sliced ham from this weekend).

Not bad for 1.5 hours work this morning!
